    PERPETUUM DUCK RESTAURANT PHILOSOPHY

    WHY DUCKS?
    ...because we love eating them and they are a traditional Czech food, so one day we decided to try something absolutely new. To set up the first Prague pure duck restaurant, or in the words of Ája Vrzáňová, ‘duck joint’. And so here in Dejvice, not far from the big roundabout, we opened a restaurant for 40 people which, with its design and homely atmosphere, is one of the most chilled-out around.
    Duck specialities and Czech cuisine in its modern sense form the backbone to our success. You can taste a number of kinds of duck in a huge variety of styles, from starter all the way to dessert. Quality ingredients from local and foreign suppliers and an approach to cooking inherited from our grandmothers have resulted some great combinations and tastes. Thanks to the diffusion of world cuisine, we too use new methods of cooking previously uncommon in these latitudes such as confit ...(slowly cooking over a number of hours (90°C) e.g. duck leg in fat and only then roasting it to give it a crispy skin).
    ‘Ducks, ducks, everywhere just ducks’ - as said in one Czech film – served for you not only in our restaurant , but you can also take home a family duck lunch (rich duck broth and whole duck with a mix of home-made dumplings and sauerkraut) in a roasting tin borrowed from us.
    For those who don’t eat duck, we can cook or grill fish, dark or white meat or other dishes including a good selection of vegetarian meals and seasonal specialities such as white truffle, lobster and similar delicacies with just as much love. And you can taste them in many different ways, combining them with fresh ingredients of the day and experience a complete culinary experience in any season of the year. 
    When choosing a delicious beverage to go with duck, we have Budvar 12° on tap for beer enthusiasts. Wine lovers can choose from our extensive wine list. Our wine comes for the most part from Czech and European wine-makers, generally smaller independent producers together with some New World bottles and is stored in our wine cellar at a constant temperature, where we plan in the future to have seating available for small tasting sessions not only of wine, but also spirits, cigars, chocolate and other curiosities.
